Cabbage & Spinach Turkey Rolls
1Tblsp cream cheese 1/3 less fat
1 1/2Tblsp nonfat greek yogurt (I use Fage Total 0%)
1tsp horseradish mustard
6-12 slivers of cabbage
6-12 slivers of onion
1/4 - 1/2cup slivered spinach leaves
6 slices of maple turkey deli meat (nitrate free)
In a small mixing bowl, combine the cream cheese, yogurt & mustard until well blended. Lay out turkey slices and spread with cream cheese mixture. Divide cabbage, onion & spinach leaves onto each turkey slice, then roll & serve!
These Turkey Rolls are very versatile and can be filled with almost any kind of vegetable or fruit. I also make breakfast turkey rolls by substituting the mustard for cinnamon and stuffing the turkey rolls with raisins or grapes.
