Orange Roasted Cornish Game Hens

Orange Rosemary Cornish Game Hens

2 cornish game hens
olive oil spray
1 tsp brown sugar
2 tbls orange zest
1 orange, zested, peeled & chopped
2 cloves of garlic, peeled & whole
4 tsp rosemary
salt & pepper

Preheat your oven to 400F degrees.

First start by rinsing your cornish game hens in luke-warm water.  Remember to rinse the inside of the hens.  Also, check to see if the giblets are still inside the bird. (Typically they are not, but it's worth a check)

Spray a baking dish with olive oil spray. Pat the hens dry and lay breast side up in baking dish.  Using olive oil spray, lightly mist the hens. Salt and pepper.  Sprinkle with brown sugar.  Zest one orange and sprinkle or rub with orange zest.  Peel your orange and cut into cubes.  Stuff your hens with cubed oranges, one garlic clove each & 2 tsp of rosemary per bird.

Bake at 400F degrees for about 1 hour.  Internal temperature should read 165F degrees.  Remove from oven and let rest 10 minutes before carving. Enjoy!
