Pecan Crusted Chicken
1 large egg white
1/2c minced pecans
2 tsp parsley
1 tsp herbamare
3 boneless, skinless chicken breasts
low-sugar honey mustard dressing
Preheat oven to 350F degrees. Lightly mist a nonstick baking sheet with olive oil.
In a small bowl, beat the egg white with a fork. In another small bowl, combine the pecans, parsley and salt. Dip each chicken breast in the egg whites then roll in the pecan mixture. Place chicken breasts on baking sheet. Bake for 20 minutes or until no longer pink. Remove from oven and let stand 3-4 minutes. Serve with low-sugar honey mustard dressing as a dipping sauce. Enjoy :)

You can buy Herbamare at Whole Foods and on Amazon.com. It is my absolute favorite seasoning substitute instead of salt! A little goes a very long way. You should be able to find it on Amazon for around $8 for 8oz. (which will last a long time) As far as the Low Sugar Honey Mustard, I prefer to make my own natural sauce. You can take a couple tablespoons of mustard (I use brown mustard) and add a teaspoon or two of honey. This way you can make it as bitter or sweet as your taste buds prefer it! It goes soooo well with this Pecan Crusted Chicken!
