Cherry Three Grain Porridge

Cherry Three Grain Porridge

1/2c oats
1c almond milk
2 tblsp flaxseed, ground
3 tblsp dried cherries
2 tsp coconut oil
1/4 tsp salt
2 tblsp chopped almonds
1/2 to 1 tsp cinnamon (to taste)
1/4 tsp cardamom
1/4c millet, cooked
1/4c wild rice, cooked
drizzle honey, if desired

In a saucepan on medium heat, add the oats, almond milk, flaxseed, dried cherries, coconut oil, salt, almonds, cardamom and cinnamon.  Stir to combine well and cook 2-5 minutes until slightly thick and creamy. Stir in the millet and wild rice and continue to cook until warmed through. If porridge gets too thick, add additional almond milk.  Serve immediately with drizzled honey if desired.  Refrigerate leftovers up to 5 days.
