Sauteed Brussel Sprouts with Bacon & Onion
2 1/2 pounds brussel sprouts, trimmed
4 slices bacon, cut into 1inc pieces
1 tblsp olive oil
1 large onion, diced
4 spriggs of thyme (substitute 3tsp of dried thyme)
1 tsp salt
black pepper, to taste
2 tsp lemon juice (optional)
Cut brussel sprouts into quarters, unless very small, then cut in half. Cook sprouts in boiling water until almost tender, 3-5 minutes. Drain.
Meanwhile, in a large skillet cook bacon pieces over medium heat until brown, not crisp. Remove & let drain on a paper towel lined plate. Remove bacon grease from pan EXCEPT about 1 tblsp will remain. Add olive oil & onion and saute until slightly tender. Stir in thyme, salt & pepper. Increase heat to medium-high and add Brussel sprouts, lightly tossing and cook until tender & warmed through, about 3 minutes. If you used the sprig of thyme, remove sprig. Otherwise, add bacon and lemon juice (if using), toss lightly and serve.

Don't be afraid! I know what you are thinking...Brussel Sprouts? Who eats those? But these are actually really good & very healthy for you. There is just enough bacon & onion added to give this dish the "yum" factor your family loves!!
