This is the best granola I've ever had & not because it's my recipe :) We love to use this granola on yogurt, frozen yogurt, as cereal with milk and even sprinkled over fruit compote and bananas. I hope you enjoy this simple recipe!
Grajeda Family Granola
olive oil mist
1-1/2c rolled oats
1/2c quinoa flakes
1/2c coconut
1/2c quinoa
1/2c dried currants
1/2c ground flaxseed
1/2c peanuts, chopped
1/2c almonds, chopped
2 tsp cinnamon
1/4c coconut oil, melted
1 tblsp olive oil
1/4c agave nectar
1/4c maple syrup
Preheat oven to 225F degrees. Spray a baking sheet with olive oil mist and set aside.
Mix dry ingredients together, rolled oats, quinoa flakes, coconut, quinoa, dried currants, flaxseed, peanuts, almonds and cinnamon. In a separate bowl, combine the melted coconut oil, olive oil, agave & maple syrup. Pour over dry ingredients slowly stirring until all ingredients are well combined and coated. Pour mixture on the greased baking sheet. Spread mixture into an even layer. Bake for 60-90 minutes or until golden, turning every 15 minutes. Remove from oven and turn one last time. Allow granola to completely cool. Break into pieces and save in a gallon sized plastic bag.
Makes 8 cups.
