Potato Egg Bake
8 eggs
3/4c almond milk
2 1/2c shredded potatoes
3/4c shredded cheddar cheese
1/2c chopped spinach
1/2c cubed ham or turkey bacon
1 tblsp green pepper
1 tblsp red pepper
1 tsp salt
1 tsp chopped chives
1/2 tsp black pepper
3/4c shredded cheddar cheese
Preheat oven to 325F Degrees. Grease a 9x9 baking dish. Set aside.
In a small bowl, beat eggs and milk together until well blended. In a large mixing bowl, combine potatoes, 3/4c cheese, spinach, ham/bacon, peppers, salt, chives and pepper. Mix well. Add the egg mixture to the potato mixture and mix well.
Pour into the prepared baking dish. Sprinkle with 3/4c cheese. Bake about 45 minutes or until mixture is set and knife comes out clean when inserted into the center. Serve immediately.
