Peanut Butter Cookies*
olive oil spray
3/4c all-purpose flour
1/2c whole-wheat flour
1 tsp baking soda
1/4c butter, softened
3/4c natural peanut butter
1/3c packed light brown sugar
1/3c granulated sugar
1/2 tsp vanilla extract
1/4c egg beaters
Preheat oven to 375 degrees. Line a baking pan with foil & mist with olive oil.
In a medium bowl, mix flours & baking soda. In a large bowl, whisk together the butter, peanut butter and sugars until fluffy. Add the vanilla and egg, beat until well combined. Gradually stir in the flour mixture, until well blended.
Shape the dough into 3/4" balls, and place on foil lined backing pan. Crisscross each cookie with the tines of a fork. Bake 8-10 minutes and allow to cool before serving.
Makes 42 cookies.

*I only make these cookies for very special occasions & when I am having company over. The do contain butter which has cholesterol and regular white & brown sugar. These are NOT the healthiest substitute for peanut butter cookies, but when having company over, these are a healthier choice than the full-fat version at over 170 calories per cookies and 11g fat!
