2 corn tortillas (low fat)
1 tblsp Mike's Homemade Salsa
2 tblsp low-moisture, part-skim mozzarella cheese
1/2c egg beaters
Top tortillas with salsa & cheese, microwave until cheese is melted, about 30 seconds. Heat a skillet, lightly misted with olive oil. Scramble egg beaters. Divide scrambled eggs onto tacos & enjoy!

I had these for breakfast this morning & they were GREAT!!! I felt like I was cheating & that's the best kind of meal!!
