Texas Caviar

1 (15oz) can black beans, rinsed & drained
1 (15oz) can corn, rinsed & drained
1/2c spinach, finely chopped
1/2 yellow zucchini, finely chopped
1/4c fresh salsa (try Mike's Homemade Salsa Recipe)
2 tblsp cilantro, chopped
1 tsp red wine vinegar
1 tsp cumin
pinch salt
pinch black pepper
hot sauce, to taste (optional)

In a large bowl, combine all ingredients.  Season with salt, pepper & hot sauce (optional) and refrigerate at least 2 hours or overnight before serving.

Serving: 1/2c  102 cal   5g protein   25g carbs   4g fiber
