Feta Stuffed Mushrooms

Feta Stuffed Mushrooms

8 medium button mushrooms
3 tblsp feta cheese, crumbled
2 tsp parsley, dried
1 tsp extra virgin olive oil
1/4 tsp cayenne pepper
olive oil spray

Preheat oven to 425F degrees.  Lightly mist a baking sheet with olive oil.

Remove stems form mushrooms and set on the baking sheet, stem-side up.  In a small bowl, add the cheese, parsley, oil and cayenne.  Stir and mix well.  Spoon mixture into mushrooms caps.  Bake 12-15 minutes or until tender.  Serve warm.
