1 tblsp olive oil
juice of 1 lime
1c brown rice (I use long grain)
1/2 tsp herbamare
2 tsp fresh cilantro, minced
In a medium saucepan over medium-high heat, add the olive oil, lime juice and brown rice. Stir for 1 minute. Add the water and salt. Bring to a boil, then reduce the heat to low and simmer for 45 minutes or until rice is tender. Remove and fluff rice with fork while tossing in the chopped cilantro. Serve immediately.
