Perfect Pancakes

Perfect Pancakes

1/2c oat flour
1/2c buttermilk
1 large egg white
1/2 tsp baking soda
1/4 tsp vanilla
1/4 tsp salt
1/4 tsp cinnamon
1 tsp agave
olive oil spray

In a small bowl, combine all ingredients until well blended.  Let stand for 10 minutes so baking soda can take affect.  Heat a large skillet over medium-heat until it's hot enough that a spritz of water sizzles on the surface.  Mist with olive oil spray and pour the batter in 1/8c dollops onto the skillet.  Cook for 2 minutes or until bubbles appear on the tops of pancakes, then flip and cook an additional 2 minutes or until brown on both sides.  Top with fresh fruit, jam or try our Blueberry Syrup Recipe! Enjoy!!

Makes 8 pancakes (4 pancakes per serving)
