Loaded Sweet Potato No-Skins
2 large sweet potatoes
1 tsp olive oil
1/8 tsp salt
1/8 tsp garlic powder
1/8 tsp cayenne pepper (optional - we like it hot :)
2 oz finely shredded low-moisture, part-skim mozzarella cheese
5 slices turkey bacon, minced
4 tsp scallions, finely chopped (optional)
2 tblsp fat-free greek yogurt (I used Fage Total 0%)
Preheat over to 450 degrees. Line a baking sheet with foil.
Cut raw turkey bacon into small pieces. Fry in skillet until browned, but not crisp. Set on papertowel lined plate to absorb excess fat.
Peel sweet potatoes and cut into 1/4" - 1/3" rounds and place in gallon sized plastic bag. Add olive oil, salt, garlic powder & cayenne to plastic bag, seal & shake until all potato pieces are evenly coated with oil spices. Place the poato rounds in a single layer ont eh prepared pan so they do not touch. Bake them for 10 minutes. FLip them and bake for an additional 7 minutes. Push the potato rounds together in a single layer and sprinkle with mozzarella cheese & bacon bits. Bake for an additional 2-3 minutes or until cheese is melted. Serve immediately with 1/2 tsp of yogurt on top, if desired.
