1 large chicken breast, cut into small pieces
2c brown rice, cooked
1c broccoli, steamed
4 slices fat free cheese slices or veggie cheese slices
3 tblsp milk
1 tsp parsley
1/4 tsp garlic powder
1/4 tsp pepper
1/4c whole grain bread crumbs
Preheat oven to 425 degrees.
Mist a skillet with olive oil on medium-high heat, cook chicken until lightly browned, 2-3 minutes. Add cooked brown rice & steamed broccoli. Turn off heat. In a glass measuring cup, tear cheese slices into smaller pieces and add milk. Microwave until melted & stir, adding more milk if necessary. Put half of the chicken, broccoli & rice mixture into greased baking dish. Pour half of the cheese sauce over chicken mixture. Put in remaining chicken mixture and top with rest of cheese mixture. Top with bread crumbs and bake for 12 minutes or until bubbling. Serve immediately.
Meat & vegetables can be interchanged. Try hamburger & peas or turkey & carrots. Whatever types of meat & veggies your family likes :)
