Roasted Avocado Tomatillo Salsa Verde

Roasted Avocado Tomatillo Salsa Verde

2 ½ lbs. tomatillos, husked and rinsed
2 large onions
10 cloves garlic
4 jalapeños
2 tbsp. vegetable oil
4 tsp. ground cumin
2 tsp. salt
1c packed cilantro
3 avocados
1 lime (optional)

Preheat the oven to 450 degrees F. Peel and chop the onions into quarters. Place the tomatillos, onions, garlic and jalapeños on a rimmed baking sheet. Drizzle with oil.

Roast in the oven for 15 minutes—until the exteriors are blistered but the insides are still slightly raw.

Meanwhile, half the avocados, remove the seeds, and scoop out the flesh. Cut the jalapeños in half and scrape out the seeds. Discard seeds.

Place HALF of the tomatillos, onions, jalapeños and garlic in a food processor. Pulse until mostly smooth.

Add HALF of the cumin, salt, cilantro and avocado. Pulse until the avocado is pureed into the mixture. Taste for salt.

Repeat with the remaining ingredients. If you desire an extra tart quality, add a bit of lime juice at the end.

Chicken Tortilla Soup

One of my favorite things in the world is Mexican Food! So much so that I married a hispanic man to feed my need for Mexican Food because he's so handsome & sweet :) So when I came across a recipe for Chicken Tortilla Soup, I had to do a recipe makeover!!  I hope you enjoy this recipe as much as I have!

2 tbsp olive oil
1 medium onion
1/2c green beans
2 large carrots
2 stalks celery
1 medium jalapeno
4 cloves garlic
1 lb. chicken breast
6c low sodium chicken broth
1 (14.5 oz.) can diced tomatoes w/chiles
1 tsp oregano
½ tbsp cumin
1 medium lime
½ bunch cilantro, chopped

Dice the onion, green beans, carrots, celery, and jalapeno (scrape the seeds out of the jalapeno before dicing). Mince the garlic. Cook the onion, green beans, carrots, celery, jalapeno, and garlic in olive oil over medium heat for about 5 minutes or until tender.

Add the chicken breast, chicken broth, canned tomatoes with chiles, oregano, and cumin to the pot. Bring the whole pot up to a boil over high heat then reduce the heat to low, place a lid on top, and let simmer for one hour.

After simmering for an hour with a lid on, carefully remove the chicken breast from the pot and use two forks to shred the meat. Return the meat to the pot. Squeeze the juice of one lime into the soup. Get as much juice as possible from the lime by using a spoon to scrape the inside of the lime.
Rinse the cilantro and then roughly chop the leaves. Add to the pot, give it a quick stir, and serve.

Family Recipe: Baked Swedish Meatballs

The last several weeks I have been doing some genealogy research on my family and came across some cool information dating all the way back to the 1700's.  Tracing my ancestry back to Germany, Sweden and Norway, I found my mouth watering for my Grandmother's Swedish Meatballs!  With my diet restrictions in mind (dairy & gluten free) I decided to conquer her recipe while substituting my healthier options when necessary. To my surprise they turned out AMAZING!!  I really enjoy them with roasted veggies like carrots, asparagus and a few fingerling potatoes.  I hope that you enjoy the warmth of my favorite family comfort food as much as I have.

*Recipe Note: It's important to use 80/20 ground beef when making meatballs so they don't get dried out. We will be baking them on a rack to allow excess fat to drip off.)

Baked Swedish Meatballs

3 slices of gluten free bread (I use Udi's)
1/2c unsweetened almond milk
1 small onion, chopped
2-3 cloves garlic, chopped
3 tbsp butter, divided
2 large eggs
handful of fresh parsley, chopped (you can use dried herbs too)
2 pounds grass-fed ground beef
salt & pepper to taste

In a large bowl, break apart the gluten free bread into large pieces.  Add almond milk and toss to coat. Set aside.

In a medium saucepan, saute onions and butter until translucent, about 4 minutes. Add chopped garlic and cook 2 minutes. 

Drain off excess almond milk from bread.  Add sauteed onions and garlic to bread.  Stir, then add eggs, parsley and salt & pepper.  With a handheld mixer, mix ingredients on low-med until well combined.  Add ground beef and continue mixing with handheld mixer until all ingredients are well combined.

Preheat oven to 400F. With a spoon, scoop mixture into your hands and roll all remaining mixture into meatballs.  Place meatballs on a rack that fits into a baking pan.  Place meatballs in the oven and bake 20 minutes or until no longer pink inside.

Remove from oven and serve or refrigerate for up to 5 days.  These meatballs also freeze really well!

Fried Goat Cheese Balls with Peppered Honey

10 oz goat cheese
1/3c all-purpose gluten-free flour
1 tsp kosher salt
1 egg, beaten with a splash of water
1 ¼c gluten-free bread crumbs
¼c honey
¼ tsp hot pepper flakes, finely crushed
Vegetable oil, for frying

Cut the goat cheese into 16 even pieces. Roll into 1-inch sized balls. Place on a baking sheet covered with waxed paper and freeze for 20 minutes. Combine gluten-free flour and salt in a shallow bowl. Place egg and water mixture in another bowl, and the gluten-free bread crumbs in a separate shallow bowl. Set aside. Stir together honey and hot pepper flakes- set aside. In a large saucepan, heat 2 inches of vegetable oil to 375 degrees F. Once the cheese is out of the freezer and is no longer sticky, roll the balls into the flour mixture and shake off excess. Dip into the egg mixture, and then coat evenly in the breadcrumbs. Working in batches, gently drop the coated goat cheese balls into the hot vegetable oil. Fry each ball for about 2 minutes, turning over once after 1 minute. The balls should be golden brown. Remove the balls with a slotted spoon, drain, and place on a plate with paper towel to absorb the excess oil. Once all of the balls have been fried, place on a serving plate and drizzle the spicy honey mixture over the goat cheese. Serve immediately with toothpicks.

16 Healthier Ways to Make Chips

Allegedly, once you pop you can’t stop. Since it’s usually game over once that bag opens, we’ve rounded up a list of crunchy, customizable chip-like substitutes. They’re healthier, and most importantly, still tasty. Most can be made gluten-free, and with a whole lot less salt than store-bought ’tater versions. All it takes is some slicing, rubbing in oil, baking, and our favorite part — munching.
5 Pro Tips (for all Chip Varieties)
  • Use a mandoline — a cooking utensil that can pump out uniform, thin slices — or a chef’s knife to cut slices 1/8 — 1/4 of an inch thick. It’s important to get the chips thin to get just the right crisp.
  • When placing the chips on a baking sheet, line the sheet with parchment paper and lay the chips in a single layer. If the chips overlap, the edges won’t cook evenly.
  • For even cooking, rotate the pan halfway through and flip the chips.
  • For small batches, pop the chip subs in a toaster oven.
  • Store leftovers in an airtight container, though most of these won’t stay at their peak crunchiness for long (more reason to eat ’em right up).
KaleKale is a distant cousin of broccoli and is known to have a very large amount of antioxidants compared to other fruits and veggies. Since kale can sometimes be a little bitter, try gently massaging the leaves with a little olive oil before baking. Add nutritional yeast (a vegan powder loaded with nutrients) to these lightly crunchy snacks for a cheesy taste. Or dust with Parmesan for the real McCoy. For a flat chip, use dinosaur kale. The alternative, curly kale, is much more textured but also makes a tasty chip that hangs onto dips and toppings better.
DIY: Preheat oven to 375. Rinse and dry 1 large bunch of kale, then remove the stems and tough center ribs. Rip the kale into large pieces, toss with a little olive oil, then sprinkle with some salt and pepper. Bake until crisp, about 10 to 15 minutes, checking frequently. (They can burn easily!)
CarrotFor lots of beta-carrot-ene (see what we did there?!), which converts into vitamin A in the body, munch on these orange veggie chips. Sprinkle with cinnamon, nutmeg, and a splash of OJ before popping them in the oven.
DIY: Preheat oven to 250 and bake for 45 minutes, or until crispy.
TurnipTurnips, which look like white beets with pretty purple stems, are a great source of vitamin B6, which helps to produce serotonin, the hormone that helps us sleep and control appetite. If you’d rather not peel them, make sure to give them a good scrub before the chips hit the baking sheet.
DIY: Preheat oven to 375. Roast for 20-25 minutes.
AppleWe don’t need to tell you apples are healthy. (What’s that old saying again? Something about a doctor?) Make them extra autumnal by sprinkling the slices with pumpkin pie spice, or your own mix of cinnamon, ginger, nutmeg, and allspice. We like Bare Fruit’s bake-dried chips. They’re organic with no added sugar, preservatives, or additives, and a single serving has fewer than 30 calories.
DIY: Preheat oven to 200, bake for one hour, flip, and cook for another hour.
BeetBeets have a ton of antioxidant betalain, known for its anti-inflammatory and detoxification powers. Slicing the roots and baking them produces a deep purple chip that’s sweet from natural sugars (or a golden yellow if made with golden beets). For a sweet and savory combination, top them with a dollop of goat cheese.
DIY: Preheat oven to 350, and bake 20 minutes. Rotate sheet and bake 10-20 more minutes. 
TaroThe taro root looks a bit like a potato, but inside reveals a white flesh with pretty little purple squiggles. Taro is a good source of dietary fiber and vitamin E, which protects essential lipids (naturally occurring molecules that are important for energy storage) in the body. For a full serving of veggies in every ounce, try Terra Chips, which feature taro plus sweet potato, yucca, batata, parsnip, and ruby taro. As far as bagged chip varieties go, these have less than half the sodium than standard potato chips.
DIY: Preheat an oven to 400, and bake the rounds for 15 minutes or until edges start to turn golden brown.
Green BeanThese guys manage to sneak in a bit of protein and calcium over their chip counterparts. We love Trader Joe’s lightly salted crunchy Green Beans. They’re sweet and savory at the very same time. Dip ’em in sriracha sauce for some spice!
DIY: Preheat oven to 425 and bake for 15 minutes, or until crunchy and golden brown.
BananaThese chips provide a crunch that satisfies a sweet tooth, especially when dressed up with cinnamon, or dipped in honey-drizzled Greek yogurt. And though bananas are mainly recognized for their potassium levels, they’re also a great source of vitamins C and B6. We like Funky Monkey’s bananamon flavor, which are freeze-dried and sprinkled with cinnamon (and only 45 calories for a small package).
DIY: Brush the slices with lemon juice to avoid major browning. Preheat oven to 175-200. Bake for 1½ hours. While they may be a little gooey when you take them out of the oven, they’ll harden a bit as they cool.
Butternut SquashThese are the biggest of all the chips in the land. They’re sweet, taste pumpkin-y, and you get two fun shapes out of one squash. The seedless part up top yields sizeable rounds, while the bottom part (once de-seeded and sliced) makes rings. Sweeten ’em up with a touch of maple syrup or brown sugar.
DIY: Preheat oven to 375 and bake for 20 minutes, flip and cook until brown on the edges.
Sweet PotatoFor a vitamin-A-packed snack, try slicing up bright orange sweet potatoes instead of the white ones. Brush them with olive oil, and top with minced garlic, minced rosemary, and a little sea salt for chips that rival the store bought kind. For a quick fix, try Food Should Taste Good sweet potato chips, for 2 extra grams of fiber per serving compared to regular potato chips.
DIY: Preheat oven to 400 and bake for 20-25 minutes, or until crispy.
ZucchiniThis green veggie is a solid source of niacin and thiamine, two B vitamins that help us produce healthy hair and skin. Try dipping them in egg whites, then coating them in Parmesan, black pepper, and breadcrumbs or cornmeal for extra flavor and crunch.
DIY: Preheat oven to 450. Bake for 8-10 minutes, flip slices, then roast for another 8-10 minutes.
RadishBear with these little guys. We know it’ll take a little more patience to slice ’em up, but they’re a good source of riboflavin (which helps convert food to fuel) and copper (important for our immunity). Dust these little rounds with curry, turmeric, garlic, paprika, and pepper for a super-flavorful treat.
DIY: Preheat oven to 350, roast for 15 minutes, flip and cook for another 15.
Whole Wheat TortillaThese aren’t made from sliced fruits or veggies, but they’re an incredibly simple, semi-homemade snack, and a blank canvas for all sorts of flavor combos. Grab your favorite whole-wheat wrap (we like Flatout) and slice them into wedges with a pizza cutter before tossing them in the oven. These can hold up during some serious dipping!
DIY: Preheat oven to 350, and bake wedges for 10-15 minutes.
PitaStacy’s pita chips and crisps come in a ton of flavors, like “perfectly thymed” and cinnamon sugar. It takes 14 hours to whip up a batch of the delicious, definitely dippable chips so we’re glad we don’t have to do it!
HummusSimply 7 hummus chips are made with chickpea flour (you know, the cute little beans that make hummus) and no hard-to-pronounce ingredients.
SoyFor a sweet and smoky variety, try Glenny’s barbeque soy crisps. They’re made with organic soy and organic rice flour (gluten-free!), and a single serving provides seven grams of protein.

Chicken Sausage Tacos

1 link Lean Low Sodium, Organic & Gluten Free Chicken Sausage
1c mixed field greens
2 tbsp goat cheese
1 tbsp Raspberry Merlot Dressing
3 gluten free corn tortillas

Slice the sausage and heat in a pan.  Remove sausage and heat your corn tortillas.  Plate your tortillas, add field greens to each, divide sausage among the 3 tortillas, add goat cheese and raspberry merlot dressing. Enjoy! :)

Beet Greens with Caramelized Onions

1 tblsp olive oil
1/4 lb yellow onion, diced
1/8 tsp fresh thyme
1/8 tsp fresh rosemary
1 garlic clove, minced
1/8 tsp salt
fresh black pepper
1/8c balsamic vinegar
4c beet leaves, washed and chopped

Heat the oil over medium high heat till it stops sizzling.  Add onions and reduce the heat to medium-low.  Cook slowly, stirring occasionally, until golden brown and caramelized, about 30 minutes.  Add the thyme, rosemary, garlic, salt, and pepper, and vinegar stir well to combine.  Cook for 5-15 more minute.  Add beet greens just to wilt.

Baked Quinoa Zucchini Chips with Sriracha Sauce


Quinoa Baked Zucchini Chips with Sriracha Dipping Sauce
  • 1 large zucchini, sliced into ¼ inch thick rounds
  • 2/3 cup almond milk (or milk of choice)
  • 1 tablespoon lemon juice
  • ½ cup toasted Quinoa Flour (see note)
  • ¾ cup Quinoa Flakes
  • ½ cup crumbled rice crackers OR panko breadrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon sea salt
  • ½ teaspoon fresh cracked black pepper
  • Olive oil spray

  • Sriracha Dipping Sauce
  • 1/3 cup tofu mayo or Greek Yogurt
  • 1 – 3 teaspoons Siracha (to taste)
  • 1 tablespoon fresh lime juice
  • 3 cloves minced garlic
  1. Preheat oven to 425. Place a wire rack on top of a baking sheet.
  2. Combine almond milk and lemon juice and set aside.
  3. Place quinoa flour, quinoa flakes, rice crackers, garlic powder, onion powder, smoked paprika, sea salt and black pepper in a food processor. Pulse until smooth.
  4. Dredge zucchini wedges in quinoa and cracker mixture. (Only a little bit will stick) Dip in milk mixture and then recoat with the quinoa mixture. Spray or brush with olive oil. Place on wire rack and bake for 20 to 25 minutes, until golden brown. If desired, serve with Sriracha Dipping Sauce
  5. For the dipping sauce: Combine all ingredients in a small bowl and mix until well combined. Store in the refrigerator until chilled.
Never toasted quinoa flour? It’s really simple but completely optional. I do it because I love the nutty and less earthy taste that it brings out. All you need to do is line a baking sheet with parchment paper and spread the flour out to about 1/4 inch deep. (I do a box at a time.) Bake on 220 degrees for 2 1/2 hours. Allow to cool completely and then store in a sealed container in the refrigerator or freezer.

Grajeda Family Salsa

8 cloves garlic (leave skin/paper on)
1/2 lb onion
1/2 lb jalapeno or sorreno peppers
4 lbs hot house tomatoes
2 lbs tomatillos
1 bunch cilantro
3 tblsp tomato paste
1/2 tsp cumin
salt to taste

Preheat oven to 500F degrees.

Line a baking sheet with aluminum foil. Arrange garlic, onion, peppers, tomatoes and tomatillos on the baking sheet. (DO NOT REMOVE GARLIC PAPER) This will prevent the garlic cloves from burning and becoming bitter.

Place in oven until the skins of the red tomatoes break and begin to peel back. Remove skins/papers of the garlic. Place all roasted ingredients & cilantro into the food processor. Process until slightly chunky. Add tomato paste, cumin & salt. Process again. (DO NOT OVER-PROCESS or your salsa will get runny.)

Serve warm or refrigerate up to 2 weeks. I have froze this salsa many times and it defrosts nicely! :) Enjoy!!!

Apple Cider Vinaigrette


Apple Cider Vinaigrette

3 tblsp honey
4-5 tblsp apple cider vinegar
pinch of salt
pinch of pepper
3-4 shakes Braggs 24 Spice Mix
1/8c Extra Virgin Olive Oil
2-3 cloves chopped garlic.

Whisk together the honey, acv and seasonings. Then slowly add in the olive oil while whisking. Taste and adjust as needed. Then add chopped garlic. Allow to sit for an hour so flavors combine. Keep refrigerated in air-tight container. Keeps up to 2 weeks.

Crunchy Bok Choy Slaw

1/4c rice vinegar
1 tblsp toasted sesame oil
1 tsp agave
2 tsp Dijon mustard
1/4 tsp salt
6c bok choy, very thinly sliced
2 medium carrots, peeled and shredded
2 scallions, thinly sliced
1 tsp sesame seeds

Whisk vinegar, oil, agave, mustard and salt in a large bowl until the agave dissolves. Add bok choy, carrots and scallions.  Toss to coat with the dressing. Sprinkle with sesame seeds.


Black-Eyed Pea Nachos


2 tsp expeller-pressed canola oil
1/2 red onion, diced
3 cloves garlic, finely chopped
1 1/2c Black-Eyed Peas
1/4 tsp sea salt
4 oz (about 5 cups) tortilla chips
1c shredded Monterey Jack cheese
1/2c chopped cilantro
1/2 lime
Sriracha sauce to taste

Preheat oven to 450°F. In a medium skillet, heat canola oil over medium-high heat. Add onion and garlic and cook, stirring frequently, until onion is softened, about 5 minutes. Stir in peas and salt and cook 1 more minute. 

Spread chips over the bottom of a 9- x 13-inch baking dish and spoon pea mixture over the top. Sprinkle with cheese and bake just until cheese melts and the nachos are very hot, 8 to 10 minutes. Sprinkle with cilantro and squeeze lime over the top of the nachos. Squirt Sriracha sauce over the top (careful, it's very spicy!) and serve warm.


Chicken Shiitake & Bok Choy Soup

8c low-salt chicken broth
6 oz shiitake mushrooms sliced
2 tblsp fresh ginger, peeled, chopped
3 tblsp fish sauce
1 tblsp soy sauce
1 tblsp sesame oil
1/4 tsp chili oil
3c sliced bok choy
4 tsp rice vinegar
2 green onions, sliced

Bring broth, mushrooms and ginger to boil in large pot. Reduce heat and simmer 3 minutes. Add fish sauce, soy sauce, sesame oil and chili oil and simmer 2 minutes. Add bok choy and simmer until bok choy is tender, about 2 minutes. Stir in rice vinegar. Season soup to taste with salt and pepper.  Ladle soup into bowls. Sprinkle with green onions and serve.


Baked Zucchini Chips

1 zucchini
olive oil spray
seasonings of your choice

Preheat oven to 225 degrees.  Mist baking sheet with olive oil spray.  Slice zucchini in thin medallions and place in a single layer on the greased baking sheet.  Mist the zucchini slices with olive oil.  Bake for 45 minutes. Remove from heat, dust with spices, rotate pan and continue baking for 30-35 minutes or until golden brown.


Smoked Salmon Cheese Balls



A very affordable crowd pleaser served with crackers, flatbread or pita chips.

1 (8 ounces) package Changing Seas Norwegian Smoked Salmon, roughly chopped
1 (8 ounces) package Neufchâtel cheese
1/4 cup 365 Everyday Value Nonfat Plain Greek Yogurt
2 tablespoons lemon juice
2 teaspoons Worcestershire sauce
3 green onions, roughly chopped
3/4 cup finely chopped flat-leaf parsely, divided

Put all ingredients except for parsley into a food processor and pulse until combined, but not perfectly smooth. Transfer to a bowl, cover and chill until very cold, about 4 hours. Arrange half of parsley on a plate. Keeping half of salmon mixture chilled, spoon other half onto parsley, sprinkle parsley all over to coat and shape into a ball. Repeat with remaining parsley and salmon mixture. (If you choose to make smaller cheese balls, keep the cheese mixture very cold and work quickly.) Cover and chill until ready to serve.

PER SERVING:70 calories (40 from fat), 4.5g total fat, 2.5g saturated fat, 15mg cholesterol, 240mg sodium, 1g carbohydrate (0g dietary fiber, 1g sugar), 5g protein

Cherry Protein Pop 'Ems


Cherry Protein Pop 'Ems

1c old fashioned rolled oats
2 tblsp wheat germ
1 tblsp millet
1 tblsp chia seeds
1/2c dried unsweetened bing cherries
1/4c brown rice protein powder
1/4c unsalted, raw cashew pieces
1/4c honey
1/4c cashew butter
1 tsp real vanilla
1 egg white
olive oil spray


Preheat oven to 325F degrees,  In a large bowl, mix together oats, wheat germ, millet, chia seeds, cherries, protein powder and cashew pieces.  In a separate small bowl, stir or whisk together honey, cashew butter, vanilla and egg white.  Combine wet and dry ingredients and mix together well.

Using a spoon, scoop out golf-ball sized domes and place on a baking sheet misted with olive oil spray.  Bake for a 15-18 minutes until golden brown and crunchy.  Remove and let cool before storing in an airtight container.  Eat within one week or freeze for up to three months.

Garlic Lentil Spread


Garlic Lentil Spread

2 tblsp raw unsalted walnuts
1c Puy lentils, cooked
2 green onions, trimmed and coarsely chopped
2 cloves garlic
1 tblsp grainy mustard
1-2 tblsp avocado oil (can substitute olive oil)
1 tblsp low sodium soy sauce (can substitute tamari)
sea salt & pepper to taste

Place all ingredients in a food processor and process until smooth.  Adjust consistency by starting with 1 tblsp of oil and adding more if necessary.  Cover and refrigerate.

Breakfast in a Cup

Crust:
1c thawed hashbrowns
1/2 tsp pepper
1/4 tsp sea salt
1/2 tsp parsley, dried
1 tblsp olive oil
olive oil spray
12 paper or foil liners

Filling:
6 pieces of bacon, baked or fried - patted dry
8 eggs, beaten
1/2 c almond milk
1c fresh spinach, chopped
1/4 onion, chopped
1-2 roma tomatoes
1/2 jalapeno, minced (optional)
1/4 tsp pepper
1/4 tsp sea salt
3 tblsp shredded low fat cheese



Preheat oven to 400F Degrees.  Place 12 paper or preferably foil liners into your muffin tin. Spray with olive oil spray. Place all crust ingredients in a mixing bowl, mix well and spoon by tablespoons into the muffin liners. Press to bottom and sides leaving no holes in the crust. Bake for 12 minutes or until hashbrowns are golden brown. Remove from oven.

While the hashbrown are baking, mix all filling ingredients together and whisk until well combined.  When hashbrowns are done, poor egg filling by 1/4 cups into foil liners. Return to oven and bake for 13-15 minutes or until eggs are set.  Remove from oven and serve immediately.  I topped mine with Sicilian Yogurt Cheese :)

*These can also be refrigerated for the week or frozen for up to 3 weeks.  Reheat in the microwave or oven and serve.
**I'm also working on a mashed red potato & cauliflower crust. As soon as this is perfected I'll post the recipe here as well.

Goat Cheese Pesto Stuffed Tomatoes

1/3c goat cheese (chèvre)
2 tblsp fresh-made basil pesto
4 medium tomatoes
2 tsp extra-virgin olive oil
1/2 tsp sea salt
1/2 tsp ground pepper
1 tblsp minced fresh basil

Preheat oven to 350°F. Mix together goat cheese and pesto on a small bowl; set aside. Cut about 1/4 inch off top of tomato and discard "cap." Drizzle olive oil on tomato. Season with salt and pepper.

Bake tomatoes on baking sheet for about 45 minutes, or until tender. (They should not cook so long that they begin to fall apart.) Remove from oven and top with goat cheese mixture. Sprinkle with basil and broil for about 2 minutes, or until cheese begins to turn golden and bubble. Serve immediately.

Homemade Healthy Artichoke Dip

8 oz 1/3 less fat cream cheese
1/2c light olive oil mayo
1/2c Fage 0% greek yogurt
1/2 cup grated Parmesan cheese
3 cloves garlic, or to taste
3c shredded part-skim mozzarella cheese
1/2 tsp freshly ground black pepper
1/4 tsp cayenne pepper (optional)
1 jar marinated artichoke hearts, drained and chopped
1 small onion, diced

Preheat oven to 350°F. In the bowl of a food processor, place the cream cheese, mayonnaise, sour cream, Parmesan cheese and garlic. Purée until all ingredients are combined. Add mozzarella cheese, black pepper and cayenne, pulsing just until combined. Add artichoke hearts and pulse again just until combined. Transfer mixture to a bowl and stir in the onion.

Bake in a 9-inch square glass baking dish for 40 to 45 minutes, until bubbly and browned. Serve immediately.
