Kid Friendly Meatloaf
2/3c corn chex
1-1/2lbs ground 93/7 beef
1c cooked brown rice
2 eggs
3 tblsp ketchup (opt for a brand with no high fructose corn syrup & gluten free)
1 tsp parsley
1 tblsp onion, minced
1/2 tsp herbamare
1/4 tsp pepper
Sauce:
1/3c ketchup (opt for a brand with no high fructose corn syrup & gluten free)
1 tblsp agave
Preheat oven to 350F degrees.
Place the corn chex in a plastic bag and smash until cereal is crumbled. In a large bowl, combine the crushed cereal, beef, rice, eggs, 3 tblsp ketchup, parsley, onion, salt and pepper. Mix well with hands until all ingredients are evenly incorporated. Shape the meat mixture into 2 small loaves and black on a baking sheet misted with olive oil spray.
In a small bowl, combine the 1/3c ketchup & agave. Spoon the mixture over both loaves. Bake for 45 minutes or until caramelized and cooked through to the center.
